Menu Plan Monday - all rice, all week

September 1st, 2008

The Harry Potter weekend was fun, and I’ll post some photos later this week. The cousins are returned to their parents, and my kids and I are vegging the afternoon away. Each kid is parked in front of a tv (I know, super parenting) with a yummo piece of leftover pizza, and I’m doing a bit of internet browsing. Laundry, cleaning house, and getting out the Halloween decorations (I know it’s early, but it’s been a long decorating season drought, and I’m all about Halloween) will come later today.

After being out sick on Friday and out today for the holiday, I really need to go to work this evening when Mike gets home, but I’m thinking not. Which brings me to this week’s Menu Plan Monday.

I’m thinking not.

Yeah, that’s right. I think not. I’m not feeling it. So we’re gonna have the easiest, least time consuming meals I can imagine this week, which means it’s rice week.

Monday - usually our weekly Brinner night, but we’re skipping that this wee… we’ll have turkey and rice instead, made from the leftover turkey leg meat from our Harry Potter dinner

Tuesday - baked lemon pepper chicken and rice (followed by a PTO meeting)

Wednesday - Red Beans and Rice

Thursday - leftover turkey and rice

Friday - leftover RB&R

I do love some rice. God bless that it’s plentiful and cheap and easy to use with anything.

Now, I’m off to take a nap. Sounds like a good way to spend Labor Day, huh?

    I love you menu for this week.

    And I love rice!

    I think it was my time in Louisiana that turned me onto rice. But I could eat rice in all manner of styles for all sorts of time. I’ve even managed to make the switch from white rice to brown without anyone really complaining.

    Thanks for the comments on my blog! I do love your blog too-it is so pretty!!!

    I love the idea of leftover pizza in lunches. My oldest will eat it cold, I have to see if the twins will too. Every few weeks I like to order pizza so that works for us! I will have to try having rice more often, we only have it every few weeks but I am finding the kids are liking it more and more.

    BTW, I forget things alot too! LOL

    One of the reasons I love rice is that I can combine it with whatever is in the pantry or the fridge, wrap it all in a tortilla and have a reasonably healthy dinner in no time.

    Sounds good to me:).

    I finally made your red beans and rice:). Not quite perfectly–I don’t own any tobasco sauce so I put some chipotle sauce in it (haha!)
    It was still yummy!

    Guess what I did with the leftovers? I put it in tortillas with cheese and sour cream and it was really good!

    I’m so proud of you for trying my RB&R!! One of the wonderful things about cooking is that there isn’t a perfect way to do anything, don’t you think? Make it work for you. :)
