April Dinner Experiment - MPM

We did remarkably well last week with not eating out (again, soooo hard for us).  For right now, our April Dinner Experiment has become more about not eating out and less about trying new foods. Maybe that’ll be May’s experiment.

This week’s Menu Plan Monday theme is cleaning out the freezer. All of our meals are going to be directly drawn from the freezer. Here’s how the week’s shaping up.

Sunday - chicken & yellow rice, side of fresh fruit

Monday - homemade pizza (yummy fresh dough from Publix) with my Ninja spaghetti sauce

Ninja Spaghetti Sauce - take all of the leftover veggies from the top rack in the fridge and throw them into a sauce pan with all of the almost-icky veggies from the crisper bin… add some olive oil, onions, and green peppers.. saute till soft. Blend till smooth. Pour back into pan, add one big can of crushed tomatoes, a small can of tomato paste, and Italian seasonings. Simmer till ready to eat.  — Made this one up myself. It’s Ninja sauce because the kids don’t see the veggies coming. They just enjoy the taste.

Tuesday - Ninja Spaghetti with the leftover sauce from Monday’s pizza… cheesy biscuits 

Wednesday - Red Beans and Rice (Mike’s comfort food… reminds him of home) … cornbread

Thursday - leftover RB&R (it makes a ton) … and still more cornbread

Friday - We didn’t get to go out last week, but we do have to go to a dinner for one of Mike’s co-workers this Friday night. The kids/sitter will eat something easy … nuggets, ramen noodles, or sandwiches.

Saturday - Lemon Pork Chops (another My Girlfriend’s Kitchen meal) with fresh cucumber salad

Cucumber Salad — Peel and seed several cucumbers. Cut and seed several tomatoes. Add olive oil, sea salt, and black pepper. Mix well. Add several leaves of either fresh sweet basil or mint. Mix and chill for a bit before dinner.  — Another of my own. You can add other fresh veggies, but these two are our favorites and such a pure, yummy combo.

That’ll do it. We only slipped and ate out once last week (you know, excepting my birthday), so for us, we did really well. We’ll aim for better still this week.

    I would love the RB&R recipe. That’s one I’ve never tried from scratch but a favorite of my hubby’s so he’d be proud of me if I attempted that one :)

    All sounds yummy!

    We had Chili here yesterday because it was in the low 30’s and SNOWING. Just.not.right. AT ALL!

    I’d be happy to share the RB&R recipe. It’s soooo easy. It’s a crock-pot recipe. I’ll post it for you later this week.
