I pretty much quit doing this all year last year & I’m going to start again. I did so much better, both with budgeting and with putting healthier meals on the table when I was planning, so I’m hoping to get back in the habit of doing this. Monday - Today’s the first day of school for both kids, so we have to celebrate today. So cinnamon waffles and turkey bacon it is.

Tuesday - baked zucchini … I got the recipe from The Recipe Mission who lifted it from Boston.com. I may swap out the ground meat with Boca crumbles. Shhh… don’t tell.

Wednesday - turkey burgers & fruit salad … We’re going to try the children’s and youth programs at the church we’re visiting & they start on Wednesday night. We’ll have to do a quick and easy dinner.

Thursday - spaghetti with Ninja sauce

Friday - Our first Monthly Date Night. We’ll eat out.

Saturday - Come on… it’s Saturday. There is no menu for Saturday.

I’m at it again. It’s been a challenging six weeks for us, to say the least… Mike’s appendectomy, my shingles, vertigo… and we’ve spent those six weeks hanging on, so there hasn’t been any meal planning other than ‘geez, what should we eat?’ I think it’s time to get things in order.

We’re starting to work on eating a bit healthier, on utilizing the fresh fruits and veggies from the stand near the house, so I’m going to try to stop by the stand every day or so and pick up enough for a couple of days so that we’re sure to be eating the freshest ingredients possible. Last night, we had grilled chicken pasta salad, an all-time favorite of Mike and me. He and the kids will have it again tonight while I’m at my cake decorating class. Grilled chicken, crazy colored veggie pasta and loads of fresh grilled veggies.

Tuesday - summer rolls (recipe from this month’s “Everyday Food”)

Wednesday - pork chops with lemon couscous

Thursday - Griff’s birthday… He’s requested to go to Smokey Bones, so we’ll be eating some BBQ.

Friday - grilled margarita pizzas … fresh Roma tomatoes, mozza, and basil

With the grilled chicken from Sunday, I’ll make a fresh chicken salad for Mike and the kids to make chicken wraps for lunch this week. I’m thinking of challenging the kids to see who can eat the most fruits and veggies per day to increase our daily intake (which is currently hovering in the pitiful range). I just need to determine a good reward for the winner.

We’ve done really lousy with the whole meal planning lately… eating whatever I could manage or whatever I could take out. And much as I like to eat out, I have to admit I’m a little tired of it. So this week, I’m determined to stick with my meal plan. Since we’ve gotten out of the habit of eating well, the kids are back to saying they don’t  like their veggies, so we’ll have to ease them back into eating them. They do, however, like fruit, so I’ll serve them fruit while they’re doing homework & I’m cooking dinner. Winter Menu Plan Monday

Monday - Creole Pork Chops and rice… In the Crock-Pot… it’ll cook all day and be ready when Eliza and I get home from Girl Scouts… yum

Tuesday - lemon pepper chicken with cousous and carrots

Wednesday - roast beef with carrots and potatoes

Thursday - loaded baked potatoes

Friday - pizza… always pizza on Fridays

Thursday - homemade corn dogs for Eliza

Friday - The kids are going to stay with the cousins & Mike’s taking me to see Wicked in Tampa as my early Valentine’s Day present.

It’s been forever since I’ve made one of these lists, and it’s oddly comforting. Much as I enjoyed the holidays, it is always nice to get settled back into a routine in January. It’s time to get back to cooking healthier meals and spending more quality time around the table together.

Sunday - cinnamon rolls for breakfast… crazy lunch… spinach chicken tortellini soup for dinner (yum)

Monday - spaghetti

Tuesday - choose your leftover night

Wednesday - homemade macaroni and cheese … a healthy version from the Food Network magazine. We’ll see how it goes.

Thursday - lemon pepper chicken with broccoli couscous

Friday - dinner out

Eliza wants lunchables every day for lunch (which isn’t going to happen), and Griff wants BBQ chicken calzones (which will). I’m going to make Flu Fighter Cookies from the Food Network Magazine to hand out for breakfast. Neither kid wants to eat breakfast these days, so maybe the lure of a cookie will be enough. I’ll omit the nuts and add extra dried fruit. They can snack on these in the car on the way to school. This post over at Cookie Madness points out that the cookies probably won’t really fight the flu, but it also notes that they taste pretty groovy.
