first sand of the season (Wordless Wednesday… with words)
Last week, I announced that we were, without fail, going to clean the house all day Saturday until it was either clean or we passed out from the effort. Mike suggested Friday, though, that I’d had all the stress I could take & that we should do something fun. Of course, he suggested the beach, knowing I can’t resist the lure.
So we got everything ready, all the while reminding the kids about the cleaning day Saturday. Saturday morning, I told them it was time to get dressed & threw their swimsuits at them. It was great fun.
The water was way too cold for me - I’m a wimp - so I sat in the shade of the umbrella, digging my toes into the sand, reading a book and listening to the Latin music from the group of folks next to me. It was very nearly perfect.


Menu Plan Monday - Finally
February was a busy month for us… we had visitors, I did a lot of traveling. In general, there wasn’t any menu planning at all. It was more of a ‘eat whatever you can find/what should we take out tonight’ mentality. I’m actually glad to be back to this, looking forward to some homecooked meals.
I’ve gotten both the Paula Deen magazine and the Food Network magazine recently, so I’m thinking we’ll be trying new recipes.
Sunday - Chicken tacos with black beans (I LOVE black beans. My kids not so much, but whatever.) and apple carrot slaw (I’ll take any leftover chicken and beans and make chicken taco calzones for Griff’s lunch.)
Monday -brinner - pancakes with sausage
Tuesday - Veggie Burgers (Food Network mag recipe), fruit salad
Wednesday - Fried chicken strips with broccoli & parm, glazed carrots
Thursday - Chicken and yellow rice
Friday - We’ll have Hayden and Hannah for an overnight visit, so I think we’ll get pizza for the kids. Mike and I have tickets to an Astros Spring Training game, so the sitter can hand out pizza.

Wordless Wednesday - Great Art, Great Friend
This weekend, a sweet friend of mine is coming to visit. She is an unbelieveable artist, and I am blessed to have paintings that she has created here in our house.
For her birthday one year, I took shots of her work - like the wild goose pagoda here - and uploaded them to Moo and had little cards made of them. Now, I don’t know what she’s doing with those cards, but I’ve got one of the Tink cards on my computer at work. It makes me smile, which isn’t always the easiest thing at work.
But my very favorite painting of all is my fish. It’s in our bedroom & I adore it.
I’ve got pieces of Aleece all over, but it’s not as good as having Aleece here in my house, laughing with me. Two more days.

Wordless Wednesday… Ninja Spaghetti
If you’ve read my Menu Plan Monday more than once, you’ll have noticed that I make Ninja Spaghetti just all the time. It’s my own creation… it’s culinary trickery.
And here are some photos so you can see for yourself the yumminess.
It starts off beautifully, right? There are bell peppers and onions and shredded carrots and edamame and spinach and Italian herbs.
Then, blend the whole thing. Add a can of crushed tomatoes and a small can of tomato paste. For extra veggie goodness, add a can of V8. It looks pretty awful now. You’ll be best served if you cover the pot at this point.
Seriously… your whole house is going to smell phenominal. And if they don’t see the yuckiness, they’re going to be eagerly anticipating dinner.
Add some pasta (and meat if you want), top with cheese and bake just until the cheese is all melty.
Veggie packed love. And only the mama knows.
