The holidays are just around the corner, and I can hardly wait! I’m just all excited.

Sunday - gumbo

Monday - brinner

Tuesday - gumbo

Wednesday - spaghetti (leftover Ninja sauce from last week)

Thursday - Griff’s got a chorus concert, so I think we’ll just pick up a rotisserie chicken at the Publix and a few quick sides, so we can eat and be at the concert on time.

Friday - the kids are going to Chuck and Stacy’s for the night, so we’ll eat out in Orlando

Menu Plan Monday - good gosh, is it Monday already?

Eliza always says the weekend should be longer, and I completely agree with her. Last week wasn’t just a stellar week at work, and I’m not really quite ready to have another go at it. But go at it, we will.

Sunday - Ninja Spaghetti (including ground turkey since I can’t convince the fam to go without meat) with Mickey Mouse pasta, at Eliza’s request… lots of veggies in the sauce, so none on the side… and warm yeast rolls

Monday - Taco Soup (let’s face it… it’s not gonna get cool enough for soup here till January, and I want soup, so we’re just going to have to pretend… Mike says we’ll turn the air conditioner down). Taco Soup is one of our collective favorites. I’d list my recipe, but I figure everyone already has a taco soup recipe, right?

Tuesday - Leftover Spaghetti, this time with whole wheat spaghetti noodles and cheesy garlic biscuits

Wednesday - I’m getting my hair cut and colored (dark this time, special for my mom’s visit during Thanksgiving), so Mike and the kids are on their own. Leftover taco soup, I’m thinking.

Thursday - Chicken ravioli with broccoli and alfredo sauce

Friday - leaving this one blank… pretty sure Griff’s got a spirit night for school one night this week, so we’ll eat out whatever night that is & we’ll shift something to Friday

Menu Plan Monday - election week

This week, I’m aiming to add more fruits and vegetables to our diets. I’m not feeling particularly optimistic, but we do need to have a goal, right? That said, as I look trough my cookbooks, I keep thinking that all I really want is comfort food. We’ll see if I can manage a happy middle ground.

Sunday - Chicken and broccoli alfredo angel hair

Monday -Spaghetti alla Ceci (from Rachael Ray’s “Express Lane Meals” cookbook), salad

Tuesday - Black beans and yellow rice

Wednesday -Broccoli cheese soup

Thursday - Wonton soup

Menu Plan Monday - Halloween edition!

The start of another week. I swear the weekends come to an end way too fast these days! I’d completely forgotten that this coming Friday is Halloween, which means I have no candy yet. I’ll have to go do some candy shopping later. And the Target has their Halloween stuff on sale, so I may have to swing by there. They had really groovy cupcake tins that I wanted.

Anyway… our meals this week.

Sunday - brinner

Monday - Chicken Ceasar Salad

Tuesday - Bruschetta Chicken with spinach salad

Wednesday - Chicken Lo-Mein

Thursday - leftovers

Friday - Vampire Fangs in Blood (apple slices dipped in strawberry jam), Mummy Dogs

Saturday - We’ll be with the cousins celebrating their birthdays.

Menu Plan Monday - the MJO visit!

We are SO excited about our friends - Mandy, Josh, and Olivia - coming to visit. They’re going to be arriving Thursday evening, so they’ll be a part of our menu this week. In addition to the allergies our kids have, Olivia is allergic to soy, and Mandy is on a low sodium diet for her heart. Josh has no allergies, just a general pickiness that fits in right nicely with us. So, no onions, peppers or tomatoes, either. Mike can’t have melon without Benadryl.

Monday - leftover Chicken Enchilada Soup - sooo yummy

Tuesday - Jambalaya - without the mushrooms… who puts mushrooms in jambalaya?!

Wednesday - leftover jambalaya

Thursday -We’ll be picking them up at the airport around 7 p.m. and then we’ll eat at the Spaghetti Warehouse in Ybor City on the way back. Best soup ever.

Friday -Breakfast - it’s Friday & here in our house, every Friday morning is Chick Fil A morning. We’ll have CFA before we head out for our day at Disney. Lunch and dinner will be at Disney. Woohoo!

Saturday - Breakfast - I’m guessing everyone’s gonna be worn out after Friday’s day at the happiest place on earth, so we’re gonna have pancakes to start our day. … Lunch - grilled chicken sanwiches… Dinner - Mike’s going to grill burgers, and we’ll have all of the yummy sides.

Sunday - Breakfast - homemade waffles or muffins. Group vote.  … Lunch - chicken tacos … We’re heading back to Disney for the Not So Scary Halloween, so we’ll have dinner at Disney.

Working on this menu reminds me of how little thought I put into the nutritional aspects of our meals. I’m gonna have to start working harder at that.

Monday - A home day. We’re going to rest Monday morning, homemade cinnamon rolls for breakfast. We’re going to go paint our own pottery late morning and have the Mongolian Grill for lunch, at Josh’s request. Dinner - pork roast, baked potatoes, fresh veggies.

I’m sure I’ll have to amend this as the week goes along, but this is what we have at this point.
