We’ve done really lousy with the whole meal planning lately… eating whatever I could manage or whatever I could take out. And much as I like to eat out, I have to admit I’m a little tired of it. So this week, I’m determined to stick with my meal plan. Since we’ve gotten out of the habit of eating well, the kids are back to saying they don’t like their veggies, so we’ll have to ease them back into eating them. They do, however, like fruit, so I’ll serve them fruit while they’re doing homework & I’m cooking dinner. 
Monday - Creole Pork Chops and rice… In the Crock-Pot… it’ll cook all day and be ready when Eliza and I get home from Girl Scouts… yum
Tuesday - lemon pepper chicken with cousous and carrots
Wednesday - roast beef with carrots and potatoes
Thursday - loaded baked potatoes
Friday - pizza… always pizza on Fridays

Feeling tired today… aiming for a simple week of meals. 
Sunday - beef tip hoagies
Monday - (Mike will cook while Eliza & I are at our Daisy meeting.) Chicken and yellow rice
Tuesday - Spanish noodles with chicken and chorizo
Wednesday - brinner
Thursday - homemade corn dogs for Eliza
Friday - The kids are going to stay with the cousins & Mike’s taking me to see Wicked in Tampa as my early Valentine’s Day present.

menu plan monday
It’s been forever since I’ve made one of these lists, and it’s oddly comforting. Much as I enjoyed the holidays, it is always nice to get settled back into a routine in January. It’s time to get back to cooking healthier meals and spending more quality time around the table together.
Sunday - cinnamon rolls for breakfast… crazy lunch… spinach chicken tortellini soup for dinner (yum)
Monday - spaghetti
Tuesday - choose your leftover night
Wednesday - homemade macaroni and cheese … a healthy version from the Food Network magazine. We’ll see how it goes.
Thursday - lemon pepper chicken with broccoli couscous
Friday - dinner out
Eliza wants lunchables every day for lunch (which isn’t going to happen), and Griff wants BBQ chicken calzones (which will). I’m going to make Flu Fighter Cookies from the Food Network Magazine to hand out for breakfast. Neither kid wants to eat breakfast these days, so maybe the lure of a cookie will be enough. I’ll omit the nuts and add extra dried fruit. They can snack on these in the car on the way to school. This post over at Cookie Madness points out that the cookies probably won’t really fight the flu, but it also notes that they taste pretty groovy.

Menu Plan Monday
We ate out all weekend this last weekend, so I’m planning to have home food all week to make up for it. The fact that I already have groovy leftovers in the freezer will help.
Sunday - taco soup with a fruit salad appetizer
Monday - spaghetti with yeast rolls (a quick meal since it’s Girl Scouts night)
Tuesday - tortellini alfredo
Wednesday - Spanish-style Noodles with chicken and sausage (this month’s Food Network magazine pg. 114 - have I mentioned that it’s my favorite magazine these days?)
Thursday - chicken lo mein
Friday - crazy dinner (at Eliza’s request)

Menu Plan Monday… Griff’s in charge
We did an allergy patch test with Griff and canned pumpkin, and he made a crack about me never making things that I don’t like (which is completely untrue). But, to give the child an opportunity to have whatever he enjoys, I put him in charge of making this week’s menu.
Sunday - Chuck and Stacy and the cousins are coming to spend the day (The boys and I are working on secret Christmas presents… I am so honored to have been allowed to participate. Sure, neither of them can drive, so someone had to help, but still). We’re having burgers and chips and dips and fun stuff (broccoli apple slaw … one of my new favorites) for lunch with them. For dinner, we’re going easy with fund-raiser Little Ceasar’s pizza.
Broccoli apple slaw (c/o “Hungry Girl 200 under 200″)
- 1 Fuji and 1 Granny Smith apple
- 1 package broccoli slaw mix
- 1 small container plain Greek yogurt
- 1/2 tbs honey
- pinch of Splenda
Mix all of the ingredients together & let them sit together a bit. Crispy and crunchy and just a tad bit tangy and sweet.
Monday - meatball subs with carrot sticks
Tuesday - lasagne
Wednesday - chicken enchiladas
Thursday - homemade macaroni and cheese
Friday - leftover enchiladas (or take-out, depending on how much Mexican is left)
Now, what the smart-aleck pre-teen doesn’t know is that I’m going to healthy up every single one of his recipes. Ha.
