menu plan monday, Eliza’s birthday edition
It’s Eliza’s birthday week, so it’s a big week around here. Lots going on. But a fun, blessed week. Thanks to Org Junkie for hosting MPM each week.
Sunday - Chuck, Stacy and the kids are joining us to celebrate Mike’s birthday (last week) and Eliza’s (this week). Lunch out. Spaghetti and meatballs for dinner.
Monday - I have a meeting for Eliza’s Daisies group at school, so leftover meatballs will become meatball subs with baby carrots on the side.
Tuesday - pork tenderloin and fall vegetables (crock pot)
Wednesday - stuffed baked potatoes
Thursday - Eliza’s Birthday - Yay! - Out to the restaurant of her choice.
Friday - Eliza’s friends are coming over for pizza.
Saturday… whew. Dunkin’s doing breakfast.

Menu Plan Monday… easy peasy week
I wish I could say we were all settled into the routine of the school year, but I can’t. So I’m doing easy things this week to try to at least make one thing easier. We’ll see how it works. I keep thinking that at some point I’ll look up & we’ll do doing great. I hope. (As always, thanks to Org Junkie for hosting MPM each week.)
Last night, we had homemade chicken and dumplings, and they were amazing. Mike’s having some leftover for lunch today.
Monday - Chicken Casablanca (crock pot)
Tuesday - spaghetti … I know it’s tired and done, but I also love a basic spaghetti. I’ll make my own sauce, so I know the kids will be getting some extra veggies.
Wednesday - roast beef with fall veggies (crock pot)
Thursday - stuffed potatoes
Friday - The kids are going to go visit the cousins for the weekend, which must mean I’m making shrimp for dinner. Mike’s requested shrimp fettucini. For Saturday, we’ll eat out on our way to the Kings of Leon concert.

menu plan monday
We’ve done really lousy with the whole meal planning lately… eating whatever I could manage or whatever I could take out. And much as I like to eat out, I have to admit I’m a little tired of it. So this week, I’m determined to stick with my meal plan. Since we’ve gotten out of the habit of eating well, the kids are back to saying they don’t like their veggies, so we’ll have to ease them back into eating them. They do, however, like fruit, so I’ll serve them fruit while they’re doing homework & I’m cooking dinner.
Monday - Creole Pork Chops and rice… In the Crock-Pot… it’ll cook all day and be ready when Eliza and I get home from Girl Scouts… yum
Tuesday - lemon pepper chicken with cousous and carrots
Wednesday - roast beef with carrots and potatoes
Thursday - loaded baked potatoes
Friday - pizza… always pizza on Fridays

menu plan monday
It’s been forever since I’ve made one of these lists, and it’s oddly comforting. Much as I enjoyed the holidays, it is always nice to get settled back into a routine in January. It’s time to get back to cooking healthier meals and spending more quality time around the table together.
Sunday - cinnamon rolls for breakfast… crazy lunch… spinach chicken tortellini soup for dinner (yum)
Monday - spaghetti
Tuesday - choose your leftover night
Wednesday - homemade macaroni and cheese … a healthy version from the Food Network magazine. We’ll see how it goes.
Thursday - lemon pepper chicken with broccoli couscous
Friday - dinner out
Eliza wants lunchables every day for lunch (which isn’t going to happen), and Griff wants BBQ chicken calzones (which will). I’m going to make Flu Fighter Cookies from the Food Network Magazine to hand out for breakfast. Neither kid wants to eat breakfast these days, so maybe the lure of a cookie will be enough. I’ll omit the nuts and add extra dried fruit. They can snack on these in the car on the way to school. This post over at Cookie Madness points out that the cookies probably won’t really fight the flu, but it also notes that they taste pretty groovy.
