Menu Plan Monday

November 30th, 2009

We ate out all weekend this last weekend, so I’m planning to have home food all week to make up for it. The fact that I already have groovy leftovers in the freezer will help.

Sunday - taco soup with a fruit salad appetizer

Monday - spaghetti with yeast rolls (a quick meal since it’s Girl Scouts night)

Tuesday - tortellini alfredo

Wednesday - Spanish-style Noodles with chicken and sausage (this month’s Food Network magazine pg. 114 - have I mentioned that it’s my favorite magazine these days?)

Thursday - chicken lo mein

Friday - crazy dinner (at Eliza’s request)

Menu Plan Monday… Griff’s in charge

November 9th, 2009

We did an allergy patch test with Griff and canned pumpkin, and he made a crack about me never making things that I don’t like (which is completely untrue). But, to give the child an opportunity to have whatever he enjoys, I put him in charge of making this week’s menu.

Sunday - Chuck and Stacy and the cousins are coming to spend the day (The boys and I are working on secret Christmas presents… I am so honored to have been allowed to participate. Sure, neither of them can drive, so someone had to help, but still). We’re having burgers and chips and dips and fun stuff (broccoli apple slaw … one of my new favorites) for lunch with them. For dinner, we’re going easy with fund-raiser Little Ceasar’s pizza.

Broccoli apple slaw (c/o “Hungry Girl 200 under 200″)

  • 1 Fuji and 1 Granny Smith apple
  • 1 package broccoli slaw mix
  • 1 small container plain Greek yogurt
  • 1/2 tbs honey
  • pinch of Splenda

Mix all of the ingredients together & let them sit together a bit. Crispy and crunchy and just a tad bit tangy and sweet.

Monday - meatball subs with carrot sticks

Tuesday - lasagne

Wednesday - chicken enchiladas

Thursday - homemade macaroni and cheese

Friday - leftover enchiladas (or take-out, depending on how much Mexican is left)

Now, what the smart-aleck pre-teen doesn’t know is that I’m going to healthy up every single one of his recipes. Ha.

Menu Plan Monday

November 2nd, 2009

It’s been a while since I did this & I can tell. We spend far more evenings doing take-out when I don’t plan ahead. Menu Plan Monday Fall

Sunday - grilled sandwiches

Monday - brinner … Scrambled cheesy eggs & sausage muffins

Tuesday - Easy beef tips & egg noodles

Wednesday - homemade chicken noodle soup (one of my favorites… I might go crazy & get bread bowls)

Thursday - lemon pepper chicken with broccoli and macaroni & cheese (I’ve got a new recipe.)

Friday - pizza & breadsticks (gotta love a Little Ceasar’s fund raiser)

Menu Plan Monday - Eliza’s birthday edition

October 5th, 2009

We got home yesterday from a weekend at the Nick Hotel in Orlando with Chuck, Stacy and the cousins where we had a wonderful time doing a little pre-birthday celebrating with Eliza. (If you ever get to go, be sure to do so. It’s just a lot of fun.) I’m reasonably sure we’re going to spend most of the rest of the week celebrating as well. Menu Plan Monday

Have I mentioned that I hate packing lunches? Because of Griff’s food allergies, it’s safer for me to pack his lunch. But the things he’ll eat for lunch aren’t things that translate well to travel. He also got the unlucky draw of having PE right after lunch, so everything needs to be really light. So we’re working with the trial and error method at this point. Right now, he’s liking vegetable sushi (which I’m going to try to learn to make myself) and hummus with pretzels and fruit. I’ll take any other suggestions anyone might have.

Monday - turkey burgers with fries and apple slices

Tuesday - chicken Ceasar salad wraps (Eliza most likely won’t eat it, but I may deconstruct one for her and see what happens)

Wednesday - Eliza’s 6th birthday - I always let the kids choose, and she wants to go to the Mongolian Grill. I’ll make her a cake, too… pink with rainbow icing… again, her choice. Wait… no, she just told me she wants to go to Chuck E Cheese. I don’t know where we’re going, but we’re going out.

Thursday - chicken and yellow rice (love the Crock-Pot)

Friday - paninis … easy Friday food

Menu Plan Monday

September 21st, 2009

It’s been a couple of weeks since I did this, and I can tell by the way we’re eating scatter-brained meals. I get annoyed at doing this every week, but it clearly helps. So here goes. Menu Plan Monday

Sunday -  Mexican chicken casserole (one of Mike’s all-time favorites - I just wish I could figure out a way to make it a little healthier) served over chips like nachos.

Monday - turkey lettuce wraps (reasonably sure the kids are going to refuse to eat this new recipe, but it looked so good that I’m going to try it anyway)

Tuesday - chicken fettucini alfredo

Wednesday - leftover chicken casserole wrapped in tortillas as enchiladas

Thursday - chicken and yellow rice

Friday - pizza (come on, it’s Friday!)
