Menu Plan Monday, Labor Day

On my rare day off, Mike has to work. Figures. So the kids and I are enjoying a lazy summer day. I wish the week could continue in such a lazy manner, but my week at work promises something different than lazy.

Maybe I’ll aim for lazy cooking instead. Menu Plan Monday

Monday - Mexican chicken rice

Tuesday - Teriyaki Turkey Lettuce Wraps (from the latest Rachael Ray magazine)… We have to have something quick since I have to be at Eliza’s PTO meeting and Open House all evening.

Wednesday -chicken and yellow rice

Thursday -taco soup

Friday - I’m flying to New Orleans for a girls weekend, so I’m thinking I’ll put BBQ in the Crock-pot for Mike and the kids to have for dinner when they get back from dropping me at the airport.

Saturday/Sunday - Mike and the kids can eat leftover taco soup and BBQ while I’m gone. I’ll leave hot dogs and deli stuff for sandwiches.

Menu Plan Monday - the first week of school edition

It’s a big week for us. Mike’s classes start again. Griff starts middle school, and Eliza starts kindergarten, which makes it a big week for the mama, too. We’re eating comfort food to ease the transition. Menu Plan Monday

Sunday - burgers and fries from Five Guys - It’s the last day of summer vacation, so I let the kids choose.

Monday - Red Beans and Rice - One of Mike’s favorite comfort foods… Seems like the perfect thing to make for dinner for the first night of school, and it’s a traditional Louisiana Monday night meal.

Tuesday - Chicken Saltado - Mike and I had dinner last week at The Columbia where I had the most amazing Chicken Salteado. I did a search and found a recipe that I’m tweaking a bit. If it works, I’ll post the recipe.

Wednesday - Chel’s Cooking Class continues with roast beef, cheesy mashed potatoes and glazed carrots. I make an amazing carrot.

Thursday - Leftover RB&R

Friday - Leftover roast beef … on hoagie rolls melted with provolone.

Menu Plan Monday - the anniversary edition

I get annoyed with making these lists, but I find that when I don’t, I end up leaving the grocery store with a mish-mash of ingredients that rarely yield a week’s worth of meals. And then, we end up eating out more than we’d anticipated, which doesn’t mesh well with Mike’s new frugality/pay everything off plan.

So here we go.

Sunday - pancakes for breakfast… burritos for lunch (everyone keeps raving about the Amy’s brand, so we’re gonna try them)… spaghetti and meatballs (I hate meatballs, but I’m thinking I can buy them pre-made and add them into my Ninja sauce)

Monday -  chicken alfredo (with broccoli, of course)

Tuesday - loaded baked potatoes

Wednesday -brinner - My kids would eat breakfast for dinner every single night of the week if I’d let them. So here’s our weekly omlet night.

Thursday - IT’S OUR 15TH ANNIVERSARY!! I ordered deep dish Chicago pizzas from the place I liked the best when we visited in July. We’re going to share anniversary pizza with the kids.

Friday - The cousins are coming to visit. I think we’ll start the weekend with chicken spaghetti, one of my favorites.

As much as I love to eat out, I’m looking forward to some home cooking this week. We’re really horrible about eating dinner at the huge coffee table in front of the tv, and I want us to stop doing that, but it’s a real challenge now that the kids are accustomed to it. My goal is going to be for us to eat every dinner at the dining room table this week.Menu Plan Monday

Sunday - BBQ chicken, mashed sweet potatoes and parmesean rolls

Monday - Chel’s Cooking Class meets again… BBQ chicken pizza (leftover chicken from Sunday evening)

Tuesday - Sausage and Pepper Pasta with turkey smoked sausage and three colors of bell peppers

Wednesday - pork tacos with groovy toppings (from the Food Network magazine)

Thursday - chicken panini and cucumber salad

Friday - leftover pork tacos

We just got back from the beach, and I’m worn out. We’ve had a fabulous July, but it’s been exhausting. I’m thinking way easy foods this week. We’ll supplement the main dish with whatever is fresh at the outdoor market each day.
