Menu Plan Monday - good gosh, is it Monday already?
Eliza always says the weekend should be longer, and I completely agree with her. Last week wasn’t just a stellar week at work, and I’m not really quite ready to have another go at it. But go at it, we will.
Sunday - Ninja Spaghetti (including ground turkey since I can’t convince the fam to go without meat) with Mickey Mouse pasta, at Eliza’s request… lots of veggies in the sauce, so none on the side… and warm yeast rolls
Monday - Taco Soup (let’s face it… it’s not gonna get cool enough for soup here till January, and I want soup, so we’re just going to have to pretend… Mike says we’ll turn the air conditioner down). Taco Soup is one of our collective favorites. I’d list my recipe, but I figure everyone already has a taco soup recipe, right?
Tuesday - Leftover Spaghetti, this time with whole wheat spaghetti noodles and cheesy garlic biscuits
Wednesday - I’m getting my hair cut and colored (dark this time, special for my mom’s visit during Thanksgiving), so Mike and the kids are on their own. Leftover taco soup, I’m thinking.
Thursday - Chicken ravioli with broccoli and alfredo sauce
Friday - leaving this one blank… pretty sure Griff’s got a spirit night for school one night this week, so we’ll eat out whatever night that is & we’ll shift something to Friday

Menu Plan Monday - the waiting for baby fish edition
I’m a little obsessed with waiting for our new fishies to have thier babies. I’m completely sure she’ll have them one day while I’m at work, and I’ll miss the big event. Anyway… to our dinners this week…
Sunday - BBQ chicken pasta with peppers and zucchini (leftover meat & sauce from Friday night)
Monday - Brinner (we collectively decided to have Brinner once a week & Mondays seemed to be a good choice since it’s a simple, easy, comforting meal)
Tuesday - Homemade cheese ravioli with Ninja sauce
Wednesday - Fettucini with corn and bacon (we were going to have this last week, but somehow didn’t)
Thursday - Pizza casserole (egg noodles, turkey pepperoni, ground turkey, Ninja sauce and mozzarella)
Friday - leftover pizza casserole

Menu Plan Monday
We’re not doing so swell at the adding of fruits and vegetables to our diets. I’m going to make a more intentional effort at it this week. (I am, however, remembering to take my cloth bags to the store. Not the same thing, I know, but still… progress.)
Sunday - grilled cheese for lunch (Eliza’s request & with 102 fever, she’s pretty much getting whatever she wants) and leftover pasta for dinner
Monday - BBQ chicken pizza (yummo with BBQ sauce, Gouda cheese & fresh pizza dough from the Publix)
Tuesday - Pizza Casserole — I substitute my Ninja Spaghetti Sauce for the pizza sauce and use ground turkey instead of ground meat… I can’t remember the last time I used real ground meat. Ick.
Wednesday - Brinner — hash browns, biscuits, sausage and eggs
Thursday - leftover pizza casserole
Friday - Tacos (with ground turkey, black beans & corn) and Spanish rice
Now, my plan is to include either fresh veggies - the cucumbers are yummy right now - or a fruit salad at each dinner meal. I know Eliza’s getting those things at daycare on the days she goes & I guess the boys are on their own. I’ll leave fresh fruit & we’ll see what happens.
