Menu Plan Monday

Between Father’s Day and Griff’s birthday, we’ve got a busy week this week.

Sunday - For Father’s Day, Mike wanted to smoke ribs on the grill, so we’re having ribs. Except for me, you know, because I’m not such a fan. I’ll have smoked chicken. I’ve made my Cucumber/Tomato YumYum (if you call something a salad in my house, people go crazy like I’m trying to feed them poison). I don’t try too hard with ribs… I mean, come on, they’re just gonna eat ribs. And because Father’s Day is clearly all about junky food, we’re having ice cream sandwiches made with fresh chocolate chip cookies & vanilla ice cream smooshed in between.

Cucumber/Tomato YumYum — Peel and seed several cucumbers. Cut into small cubes. Seed and cube an equal number of tomatos. Drizzle with olive oil and add sea salt and fresh pepper. Mix and chill. You can also add other things to the base… I added fresh red peppers to this one. I like to add fresh herbs, too, and zucchini or carrots make good additions. My kids both eat this!

Monday - Brinner - We have this a lot, don’t we? I haven’t had waffles in forever, so we’re going to have cinnamon waffles with a side of fruit salad.

Tuesday - Griff’s 10th Birthday!! - He asked Mike to smoke something for him for his birthday, so we’ll have a smoked pork roast, most likely. And corn on the cobb and zucchini… all done on the grill. We’ll finish with my easy version of my mother’s fabulous Oreo Ice Cream Pie.

Easy Oreo Ice Cream Pie - You’ll need one Oreo pie crust, oreo ice cream (Blue Bell, of course), and hot fudge in a jar. Told you it was easy. Soften the ice cream & smooth into the crust. Freeze to set. Melt the fudge & pour over the pie. Freeze again. Garnish with crushed oreos or whipped cream. We’ll top this one with 10 candles.

Wednesday - Pork and Summer Veggie Medley over rice - It’s all All Recipes adaptation. I’ll use leftover pork roast from Tuesday instead of pork chops.

Thursday - Red Beans and Rice (Chuck, I’ll put some in a freezer bag for you to take home on Saturday.)

Friday - I’ll have nuggets or hot dogs for Eliza and her sitter. We’re taking Griff to see “Get Smart,” so we’ll have movie food for dinner.

Saturday - Chuck, Stacy and the cousins are coming to help us celebrate Griff’s birthday. We’ll all go see “Kung Fu Panda,” and Mike will grill dinner. Griff’s requested stuffed burgers, so we’ll do that and follow it up with a Cold Stone birthday cake.
